Greetings from the flight deck and welcome to CenterPilot ready to fly buckle up take off maybe bumpy as you learn your wings, but we're confident. You'll be soaring through clear skies and Landing smoothly soon. So sit back relax, and enjoy your flight. Creating pre-saved Mills and CenterPilot is one of the most efficient ways to save time managing the cacfp part of your business. Pre save Mills once created and saved will be used over and over again in your pre-saved weeks. Because food components in the Mills reflect the size of the containers purchase.
The cooks have more meaningful information regarding the amounts to open and serve. You will want to be sure the correct foods are entered for each meal for someone new to CenterPilot. This may initially seem daunting. But in reality it is quite simple today. You will learn how to standardized menus. Standardized Foods used in menus create a master food list find and use Child Nutrition labels and find the correct foods and CenterPilot. The first step in using CenterPilot efficiently is to standardize the menus in your Center most centers have four to six weeks of rotating or cycle menus.
However, they may also have a few special weeks of menus for events such as we get the young child every April a cultural or International awareness week every year or even the week of Thanksgiving no matter how many cycle menus you have. The key is to standardize the meals within those weeks. The best way to do this is to always plan the same secondary foods with the same entree, for example, instead of having four versions of a cheeseburger meal. You may choose to only have one version. In our sample Center cheeseburgers will be served for lunch once in week one and again in week four.
However, even if serve more often than that, the cheeseburger should always be served with the same cheese bun and vegetable and fruit or second vegetable if the cheeseburger will be served on a whole grain bun. It should always be served on the same bun by standardizing in this way. You only need to create one pre-safe meal for the cheeseburger lunch instead of four or five. This keeps menu planning, efficient and effective. So let's take a look at our cheeseburger meal cheeseburgers pair well with french fries and we all know everyone loves those.
So we will pair cheeseburgers with french fries lettuce and tomatoes baked beans and milk along with the meat and cheese and the whole grain bun. We have a complete creditable meal. We've also ensured a serving of whole grains. You might be concerned about serving enough of a variety of fruits and vegetables. If you always serve the same choices with the same entree, however, having four or more cycle weeks gives plenty of opportunity to survey variety of fruits and vegetables. You may also choose to have a set of winter menus that are different from Summer menus with some meals appearing on both.
For example, the cheeseburger is a winner anytime of year. So that meal will remain in the menus year round. However, you may choose Mills with beef stew and shepherd's pie in the winter and meals with tuna sandwiches and chef salad in the summer. It will always simplify using your pre-save Mills if you always buy your food in the same sized containers. For some foods the brand is important for others the brand does not matter. For example, all brands of milk will have the same volumes available.
In other words a gallon of milk is a gallon of milk regardless of the brand. So for your Center if you always buy your milk and gallons you have already standardized that purchase and the brand is not important. The same will also apply to canned fresh or frozen fruits and vegetables many centers purchase some of their fruits and vegetables in number 10 cans others choose smaller cans. So as long as you are purchasing the same style or cut of these products in the same size. Can the brand does not matter.
Let's look at another example A Center serves green beans about one time per week. The first decision to make is whether the green beans will be standardized as canned fresh or frozen the food buying guide has different calculations for green beans depending on whether they are canned fresh or frozen whether the style of the green bean is cut French style whole or flat Italian and whether the green beans will be served drained heated and drained or Raw. This Center will standardize with a number 300 can of cut green beans that will be served heated and drained.
So for every pre-saved meal that includes green beans, they will select this choice in CenterPilot. And finally, our Center will serve pre-made burritos that they purchase Frozen from their vendor. They will need to standardize on a specific brand with a Child Nutrition or CN label. So in this case, the brand is important. The vendor has a choice of five burritos all different brands and all will see in labels after receiving the products specifications for the burritos from the vendor the center decides to standardize and purchase this specific burrito a whole grain cheese and bean burrito.
The brand is Fernando's and the product number is 21200. There are 96 burritos per case, according to the nutrition facts label each four and a half. Ounce. Burrito is a serving. CN label information is explained on the product specification sheet. The actual CN label is also provided by the vendor and will always be attached to the cases of burritos when they arrive at the center. The center will always have an updated CN label for this product on file to show to sponsor and state representatives when requested.
See in labels are covered in more detail in a separate training but know that validc and labels will always have a c and label number and instructions. In this Center for every pre-saved meal that includes burritos. They will select this choice in CenterPilot for the meat component and this choice and CenterPilot for the whole grain component. At the same time you are standardizing your food components. You will greatly benefit from taking the time to create a master food list a sample list can be downloaded from CenterPilot.com and is shown here.
Center staff may use this list as a starting point and may add and delete rows and columns as needed add the foods your Center uses and be sure to document the way the food is purchased. If your Center uses a food vendor, you may add the vendor item number for quicker ordering also copy and paste the way the food appears in CenterPilot to simplify food searches. We've already viewed a Child Nutrition or CN label for the burrito served in our center. Now, let's discuss see and labels in more detail and determine how to find them for the combination Foods we serve.
A combination food is a food that is usually the main dish or entree which contributes to both the meat meat alternate component of the meal pattern requirements as well as the grain component. Examples of combination Foods include Pizza corn dogs chicken nuggets and burritos other foods that may need sea and labels include chicken legs beef patties meatloaf and other foods that are not combination foods and will contribute only to the meat meat alternate component. The USDA requires that all combination foods have CN labels or product specification sheets signed by a representative of the food manufacturer.
This pizza quesadilla has both. All centers who serve these product types are required to have this information on file to prove it anytime that their foods are compliant if there's a combination food that you want to serve but you don't have the CN label you can attempt to find it. To find a c and label for a product you will need some information about the product. Let's think about what information you may already have about the product. On your vendor's website. They have chicken nuggets that are Advanced Pierre brand.
The AP product number is 68025. The first step is to determine if the product is already in CenterPilot. There are two places to look. First login to your CenterPilot account from the main menu ribbon at the top select home then currency and label list then get report click on the magnifying glass above the report and enter the product number 68025 in this example. The product number is found in CenterPilot. The whole grain component is found on page 7 and the meat component on page 14. The report automatically takes you to page 7 to view the details, including the C and label number the C and label instructions and the expiration date of the CN label to view the same information for your meat component.
Click on the second result in the search box. The second way to determine if the product is already entered into CenterPilot is to check our main website at CenterPilot.com from the menu at the top select CN labels then see and labels Excel list. This worksheet will appear to search first click on the icon in the lower right to open the spreadsheet in Excel. Type the product number in the search box here then click the number again to find in document. Click on find next or find all if the search criteria is found the cell will be highlighted.
Notice that the details included the CN label number the CN label instructions and the C and label expiration date are found as an added benefit. The actual CN label documents may be viewed or printed from this screen. For this particular product the viewable documents include a signed product specification sheet as well as a picture of the actual CN label from the case. So far we've shown how to search for CN labeled foods and CenterPilot, but what if the food search produces no results in CenterPilot a few reasons food would not be found include that the food may be new on the market or newly see in labeled also since C and labels expire every five years searching by the new number may not produce results if that number is not yet updated in CenterPilot.
The first thing to do is to ask your food vendor for information on the product including the CN label number if that is not an option consider Googling the brand name and product number to use the same example of chicken nuggets. You would Google advanced beer 68025 results will produce an information sheet on the product many times results will also produce a virtual copy of the actual CN label as you saw with the pizza quesadilla, but for the chicken nuggets, there is no actual sea and label online.
The product information sheet will show that the product is C and labeled and give the C and label instructions, but no actual C and label number which of course you need to know. Notice that there is a statement from Tyson the mother company of Advanced Pierre informing you to contact them for the child nutrition information. The Tyson website also has a number to text for product information no matter how you contact them. Be sure to provide them with the gtin number at the top of the information sheet if given the correct information they are quick to respond.
We've already shown how to find a specific can of green beans and a specific burrito in CenterPilot. Let's review that process one more time with more detail using our Master food list. Let's consider the fresh apples that we buy by the pound and serve raw unpeeled and sliced. Here are the fresh Apple descriptions and CenterPilot that mirror the choices in the food buying guide. The choice that most closely describes the way our Center buys and serves the apples is this choice? Cup raw unpeeled fruit purchased by the pound.
Therefore. This is the choice. We will use in CenterPilot every time we serve fresh apples. Now let's consider how to find the bread that our Center serves with bread. We will need to be more specific. Our bread is whole grain and is purchased in a 20 ounce package that contains 20 slices. Meaning that each slice is a one-ounce serving here are the whole grain bread choices in CenterPilot a bread one choice is assigned to any bread that has slices that weigh at least one ounce a bread two choice is assigned if each slice is under one ounce since school age participants who require a whole ounce of grain component would be required to have more than one slice.
Since the low far Center purchases is a 20 ounce loaf or 1 pound 4 ounces and has 20 slices per loaf. This is our best choice and CenterPilot. Note that if your loaf is different than any of the entries and CenterPilot, be sure to contact us so we can add it to the database for you. This is the choice we will use in CenterPilot every time we serve bread. And finally, let's consider the broccoli that we buy chopped and Frozen in a two and a half pound package. Here are the frozen broccoli choices in CenterPilot, since we purchase broccoli chopped in a two and a half pound package and serve it cooked and drained.
This is our best choice. So this is the choice we will use in CenterPilot each time. We serve broccoli. So there you have it. Now you should have a better understanding of how to prepare to use CenterPilot more efficiently. Don't worry. We won't send you out on a flight on autopilot. Our flight attendants are ready to hop on a flight with you at any time as you practice and learn your wings.
